It’s not just the French who make superb pates, Spain not only excels at the usual liver pates but also more unusual game pates and olive tapenades. Even your local supermarket should have a wide range to choose from.

Boquerones are anchovies marinaded in garlic, salt and vinegar. They make a great snack or starter.

To really kick-start your tastebuds why not try a Mojo salsa from the Canary Islands. These spicy sauces will liven up cold meats.

Spain is the world’s largest exporter of olive oil and in many ways a fine olive oil is much like a fine wine, different types of olive provide different flavours. Picual olives give a peppery taste and the manzanilla olive gives a smooth mellow flavour. A good olive oil will make all the difference to your cooking and especially your salads.

Also try Tortas de Aceite, sugary olive oil biscuits, a speciality local to Seville

No Spanish Christmas would be complete without Turron, a nougat made with almonds. The best Turron comes from Alicante and in a variety of flavours including chocolate! Marzipan is also a favourite, especially with children.
